Delicious Summer Seafood Recipes

There is no better time to enjoy seafood than in summer.  We’re quite fortunate to have readily available, fresh seafood in Australia. We love our fish and chips at the beach, prawns on the barbecue or tangy calamari salads, but it’s exciting to find a recipe that allows you to explore seafood dishes from other parts of our world.

The lovely Emma, from Love Thy Kitchen tweeted these beautiful recipes by Gourmet Traveller this month and I really wanted to share my three favourite recipes with you.

1.  Scandinavian seafood feast

A beautiful array of fresh seafood served with cucumber pickles, beetroot salad, potato salad, anchovy butter and dill mayonnaise.

2. Soft prawn tacos with coleslaw, avocado and coriander

I adore the spicy fish tacos (de pascado) at Mamasita and this recipe looks just as delicious and so simple to create.

3. Seafood and saffron soup

This Spanish-style seafood and saffron soup will definitely be on my dinner table menu this summer.  This recipe calls for vongole.   Vongole is a type of clam.   So if you’re visiting the fishmongers (of fishing yourself) you could easily use clams, cockles or pipis in this dish.
